Recipes using essential oils from today's call.
TOOTHPASTE
6 tsp. baking soda
1/3/ tsp. salt
1/2 tsp Xylitol
4 tsp. food grade glycerine
10 drops peppermint oil
3 drops Tea Tree oil
2 drops Melaleuca oil
3 drops Birch oil or Wintergreen oil
Stir together. Use about a pea size drop on your toothbrush.
FOR TRAVEL
SANITIZER
2 oz. spray bottle
8 drops Thyme Linalol oil
10 drops Tea Tree oil
8 drops Lavender oil
Distilled water as a carrier.
Put each oil into 2 oz. spray bottle and add distilled water to neck. Shake vigorously.
RELIEF FROM JET LAG
2 drops Mandrin Petfigreen oil
3 drops Melissa oil
4 drops Marjoram oil
4 drops Roman Chamomile
Jojoba oil as a carrier
In a 1 oz. bottle add all oils and add Jojoba oil to neck of bottle. Roll to blend. Put a few drops on hands, rub in and breathe deeply.
FATIGUE/JET LAG
3 drops Peppermint oil
3drops Rosemary oil
3 drops Juniper oil
Jojoba oil as carrier
Place oils in a 1 oz. bottle. Add Jojoba oil to neck. Roll bottle to blend. Put a few drops on hands and rub in. Breathe deeply.

The second topic of conversation related to the health benefits of green tea. This was a continuation of Nancy's call from yesterday. Green Tea has a high concentration of Catechin found in it. This is a type of polyphenol, which is a powerful antioxidant found not only in green tea, but also in garlic, fruits, potatoes, and some varieties of nuts.
Among the several types of catechin that exist, Epigallocatechin gallate (EGCg) is the most powerful antioxidant, and green tea contains much more EGCg than any other kind of tea.

Listen to Call July 24, 2013 Betty moderated the call today. We continued today to talk about Dr. Dean Ornish and some of his thoughts relating to his book "The Spectrum". Dr. Ornish says foods are neither good nor bad, but some are more healthful for you than others. You have a spectrum of choices. The Spectrum is based on love, not willpower. It's about feeling good, not just avoiding feeling bad. Joy of living, not fear of dying. Losing weight and gaining health. What's sustainable is pleasure, feeling good, and freedom of choice.
Char talked about a conference she and JoAnn went to last night. She said that drinking 1 ounce of wheat grass juice is like eating 3 pounds of vegetables. She also said that sprouted sunflower seeds are great to eat and gave information on how to do the sprouting. Great information!

Nancy gave us her delicious and simple (three ingredients) chocolate recipe and I gave recipes for Homemade Clif Bars and Coconut Almond Fudge.
HOMEMADE CLIF BARS
15-17 pitted dates
1 cup almonds
1 cup rolled oats
1/2 cup shredded coconut
1/2 - 3/4 cup water
Preheat oven to 350*. Grind up the oats and almonds in the food processor. When they have a crumbly consistency, add the dates and coconut. Lastly add the water slowly as you pulse the ingredients together until a batter forms. It will be thick and sticky. Line a small 8"x8" pan with parchment paper leaving enough paper sticking out on each side so you will be able to lift the whole thing out when done. Working carefully, spread batter evenly out to all sides. Press mixture down with a spatula to get it firm. Bake in the oven for about 20 minutes. Let cool completely before removing intact. Cut bars with a pizza cutter. Store in the fridge.

2 T maple syrup
1 T coconut oil
1/4 tsp. salt
1/2 tsp. almond extract
In a saucepan, combine all ingredients. Stir on medium heat until everything is combined. Pour into molds and store in the fridge to set. Should take 1-2 hours. Makes about 15

minutes. Drain. Toss with 2-3 Tblsp. olive oil, 2 Tblsp. red wine

This information comes from The American Meat Institute. If placed end to end the dogs would extend from New York City to Los Angeles nearly six times, or more than halfway around the world. The Fourth of July represents one of the top days of the year for meat consumption with Americans consuming on average about 3,500 hot dogs per second from 10 a.m. to 10 p.m. In the week leading to the Fourth of July, Americans typically buy 190 million pounds (95,000 tons) of red meat, nearly equal to the weight of the USS Enterprise aircraft carrier and 700 million pounds (350,000 tons) of chicken, nearly equal to the weight of the Empire State Building. And we wonder why we, plant based eaters, are asked.... Where do you get your protein???
Part of our conversation today included a recipe for sourdough starter so here it is:
SOURDOUGH STARTER
1 (.25) oz. pkg. of active dry yeast
2c. warm water (110 degrees)
2 c. flour (I will be using spelt for my flour)
In a large non-metalic bowl, mix together dry yeast, 2 cups water and flour. Cover loosely and leave in a warm place to ferment 4 to 8 days. Place a cookie sheet under it in case of overflow. Check occasionally. When mixture is bubbly and has a pleasant sour smell, it is ready to use. If mixture has a pink, orange or any other strange color tinge to it, THROW IT OUT! and start over. When using starter to bake, always replace with equal amounts of flour and water. If you use 1c. of starter, replace with 1c. of water and 1c. of flour. Mix well and leave out on the counter or in the oven until bubbly again (leaving the oven light on helps with the fermenting). If a clear liquid has accumulated on top (and it will) don't worry, just stir this back into starter. feed once a week with 1c. water and 1c. flour. Allow to rest at room temperature several hours after feeding. Starter can also be kept in the refrigerator if you won't be using it for an extended period of time.

2 cups cooked long grain rice, season with some salt

Wasabi Vinaigrette
1/2 cup sunflower oil
1/4 cup rice vinegar
2 teaspoons sugar
Wasabi paste to taste
Directions:
Put the oil, vinegar and sugar in a bowl and whisk to combine. Add the Wasabi to taste.
In a large bowl, combine the cooked and cooled rice with the vinaigrette. Add the remaining ingredients, adding the avocado just before serving. Season to taste with salt and pepper and serve immediately.
Two recipes caught my eye in the July/August Vegetarian Times magazine. The first was on page 56, called Lau Lau. This recipe used whole collard leaves as a wrap, much like what Char mentioned on a previous call. I thought the filling for this recipe, however was quite unique using sweet potatoes, spinach, coconut milk green onions, red pepper flakes and smoked paprika. The second recipe was on page 69. Stuffed Eggplant with Lentils and Millet. Ingredients that sound yummy together.
Last but not least we talked about an article in the April/May AARP magazine. "Kr. Oz's Handbook for Healthy Living.
We opened the discussion today with what sounded like a great salad. I will be making this on Friday so I'll let you know how it turns out.

Obesity has been labeled as a disease by the American Medical Association! Listen in to today's call for a lively discussion.

Black Bean Burgers From: |
Recipe for Black Bean Burgers by Katelin Mae and found on Forks over Knives website was presented.
1 cup cooked brown rice
1 15oz. can black beans
1/2 onion, diced
1/4 cup corn
1 tsp. cumin
1 tsp. garlic powder
1/4 tsp. chili powder
1/4 cup cornmeal
2 Tbls. salsa
Drain black beans (I would also rinse). Pour beans into bowl and mash using potato masher, fork or your hands. Preheat oven to 350 degrees. Lay parchment paper on a cookie sheet. Sweat the onion in a saute pan using no oil. When onions are translucent add corn and spices. Cook for a few more minutes. Add cornmeal, salsa, veggies, and rice to the bean bowl. Mix everything together so there is an even consistency. Form into patties about 1/2 inch thick and 3 inches in diameter. Place patties on parchment lined pan and bake 15 minutes @ 350 degrees. Flip the patties and bake for another 15 minutes. Serve between two leaves of romaine lettuce with tomato and onion.

Vacation Is Over
Hi all, for various reasons I have taken a longer vacation from the blog than I had planned.
I feel it is time to have some others post comments besides me.

Listen to June 5, 2013 Call Betty moderated Today we began the call talking about Monsanto and the marches that took place over the weekend and the lack of coverage in most areas. We also mentioned that Dr. Fuhrman had been on the Dr. Oz show and that June is Men's Month at Dr. Fuhrman's. In Dr. Fuhrman's newsletter he wrote about the benefits of lycopene as an extremely potent antioxidant.
The Nikken kick-off call was discussed and we were all delighted
that the KVB promotion of selling 3 and get 1 free was extended until
the end of 2013 and that the Joint has a new formulation for the U.S.

Today we started the call talking about the sourdough bread we've been making adding a few little tweaks to change flavoring such as Italian Seasoning.
Discussed a few recipes we have made and
enjoyed such as the Vegetarian Times recipe for Chickpea Salad with
Fennel and Artichokes,Mango, Avocado and Jicama Salad with Lime Dressing
and Lemon Creme for topping on fruit, cake or pie.
Last but not least we spoke about Oregano being a
very healthy culinary choice having powerful antioxidant and
antibacterial properties. Char mentioned that she took Oregano oil
capsules for a particular issue and was amazed at how quickly they
worked. Jeannie gave us a website for a recipe for Tomato, Avocado,
Quinoa Salad with cumin and cilantro. michelledudash.com
Mango, Avocado, Jicama Salad with Lime Dressing
6 Tablespoons extra virgin olive oil
4 1/2 Tablespoons fresh lime juice
1 1/2 teaspoons honey or agave
1/4 tsp. salt and pepper to taste
Shake vigorously in a jar until completely combined.
Taste and adjust if needed.
Store in fridge until ready to use .... Shake before pouring
FOR THE SALAD
1/2 head dinosaur kale
6 oz. baby spinach
1 avocado
1/2 lb. jicama
2-3 mangos
1/2 lime, juiced
3-4 Tablespoons green onion, chopped
black sesame seeds, optional
Stem and chop kale and place in large bowl
Roughly chop the baby spinach and mix with the kale
Peel the jicama and slice into 1/4 inch matchsticks
Cube or slice mango, removing skin
Slice the avocado and toss with a bit of lime juice to prevent browning.
Right before serving toss the greens with 1/2 to 2/3 of the dressing coating well.
Top with avocado, jicama, and mango and drizzle more of the dressing over top.
Top with green onions and black sesame seeds and serve.
LEMON CREME
1 12.3 oz. pkg. reduced fat, extra-firm silken tofu, crumbled
1/3 cup light maple syrup or agave
3 Tablespoons fresh lemon juice
1 Tablespoon grated lemon peel
I
used a fork to kind of shred the tofu out of the container and into the
bullet adding the rest of the ingredients and blending until completely
smooth.
Refrigerate until chilled.

Americans currently consume about 25.5 percent of their calories from

Listen to Call May 1, 2013 Call was moderated by Betty. She shared this review by email: On today's call we discussed the Dr. Oz Show with Mark Bittman, the author of VB6 (Vegan 'Till 6 Meal Plan). The program has just one,simple rule: Avoid meat and dairy from breakfast until dinnertime. Instead, load up on foods that are packed with nutrients, not calories - fruits, vegetables, nuts, seeds, oils. When dinnertime rolls around, however, you can eat whatever you'd like. The plan is easy and doesn't require a lot of sacrifice.
We decided that is just what the public is looking for, but not exactly what will work for us. It is a far cry from the doctors we follow (Fuhrman, McDougall and Caldwell Esselstyn). Our goal is better health, not just another diet!
We
also spoke about exercise and what effect it has on the heart, the
brain and the whole body. Information that came from Dr. Joel Fuhrman.
